I'm tellin' ya, E... it's that new book I got. That "Laurel's Kitchen Bread Book" thingy. There's a lot more kneading than I'm used to and there's a second rise and a "rounding" and relaxing and whatnot, but it's worth it. I'm up early this morning making a double batch... we shall see... But DUDE, that stuff was good and light and velvety... I wasn't optimistic during the process because I felt like the dough wasn't turning out like the description in the book... But, bread is actually a LIVE creature, so I guess it made up it's mind to do right... Now if only kneading and rising and rounding and relaxing would have that effect on Ryan...
